Plum sauce – Jo
I think plum sauce can have a range of applications where you might use a chutney or other kind of fruit-based condiment or sauce. It would be interesting as an accompaniment to cheese such as with a Welsh Rarebit. Its thinner texture and acidity would make it suitable for use in marinades or as the basis for a bbq sauce with other ingredients added. I don’t think it would be that useful an addition to our muffin recipes, but if used carefully it wouldn’t be a hindrance. As it’s quite wet I’d suggest using less of the grated vegetables or dairy, and making sure that its sourness would be a welcome addition to the flavour profile you’re going for.
