Patricia – tamarind paste
Tamarind paste is an intense, delightfully sour ingredient that can be used well outside of traditional contexts. It’s a great aspect of a marinade for meat, fish, mushrooms or tofu, and by extension makes a good base for a dressing. I’ve also seen recipes for drinks from tamarind, based on lemonade for example. As it is sour it works well in sweet and savoury applications and would be brilliant in small quantities in a cake or a spiced muffin like the ones we have been baking.
