Panisse and the senses with Leo Burtin

In this workshop, artist-chef Leo Burtin will share his tips and tricks for cooking new dishes without recipes, using all five of your senses to guide you. You will experiment with coming up with meal ideas which celebrate not just taste but your other senses also. Inspired by Leo’s love of combining food and storytelling, this workshop will combine a cooking demonstration with short creative writing activities inspired by sensory writing from chefs, novelists and poets.

Panisse and the senses with Leo Burtin


You will need

Ingredients for panisse

150 grams approximately of chickpea flour

Olive oil (or oil of your choice)

1 clove of garlic (optional and can be simply left out or it can be replaced by bay leaf or spices)


500ml water (or vegetable stock)


Ingredients for mayonnaise

250ml sunflower oil

1 egg yolk (egg version)

Liquid from 1 can of chickpeas i.e. aquafaba (egg free version)

Dijon mustard


Vinegar (egg free version)
